A quick and flavorful egg curry that's perfect for busy weeknights. Our Nati Egg Masala brings authentic South Indian flavors to this protein-rich dish. The curry features perfectly boiled eggs in a rich, spiced tomato-onion gravy.

Ingredients

Eggs (boiled and peeled)6
Namma Nati Egg Masala2 tbsp
Onions (finely chopped)2 medium
Tomatoes (chopped)2 medium
Ginger-garlic paste1 tbsp
Curry leaves1 sprig
Mustard seeds1 tsp
Oil3 tbsp
Water1 cup
Saltto taste
Fresh corianderfor garnish

Instructions

Boil the Eggs

Boil eggs for 10-12 minutes for hard-boiled. Peel and make shallow slits on the eggs for better masala absorption.

Prepare Tempering

Heat oil in a pan. Add mustard seeds and let them splutter. Add curry leaves and sauté for a few seconds.

Cook Onions & Tomatoes

Add onions and sauté until golden. Add ginger-garlic paste, cook for 2 minutes. Add tomatoes and cook until soft.

Add Masala & Water

Add Nati Egg Masala and salt. Mix well and cook for 2 minutes. Add water and bring to a boil.

Add Eggs & Simmer

Gently add the boiled eggs to the gravy. Simmer for 5-7 minutes, spooning gravy over eggs occasionally. Garnish with coriander.

  • Make slits on the eggs for better flavor absorption
  • Don't overcook the eggs - they should remain tender
  • You can fry the boiled eggs lightly before adding to curry for extra flavor
  • Adjust water quantity based on desired gravy consistency
